Cure A Castiron Griddle

Cast-iron griddles are a useful addition to any kitchen. Cast iron, when properly cured (otherwise known as "seasoned") and cared for, can last for generations and has many helpful cooking properties. Once seasoned, a cast-iron griddle will be completely nonstick and so butter or other fats do not need to be used. It is very durable. Cast iron transfers heat evenly, which means that all the food placed on it will be cooked to the same degree. Cast iron can be used with extreme heat, so it can be used in the oven as well as on the stove. Plus, it adds iron content to foods, which is useful to those suffering from anemia. Instructions


1. Preheat the oven to 400 degrees.


2. Heat the griddle for a few seconds on the stove, just enough to get the griddle warm, not hot.


3. Spread a very thin layer of shortening over the entire inside of the griddle using a paper towel.


4. Place the griddle, upside down, on the top rack of the preheated oven.


5. Put a cookie sheet on the bottom rack under the griddle to catch any dripping shortening. You may need to use two cookie sheets, depending on the size of the griddle.


6. Bake the griddle for about 45 minutes.


7. Turn off the heat and allow the griddle to cool inside the oven.


8. Repeat this process until the griddle is black and shiny.
